Replacing the plumbing in a 1900's Foursquare.

My wife and I have purchase a house that will require the plumbing on the first floor replaced. There are two full bathrooms and the kitchen that will need to be removed. We are planning on moving the kitchen and putting in a half bath with a standup shower at the back of the first floor. I have the water off at the meter and the system drained. With that done, what should I remove first? I am thinking the bathroom furthest from the main sewer line? Is this correct?
